The 17th International Conference on the Applications of Magnetic Resonance in Food Science (MRFOOD2026) will take place in Milan from 9 to 12 June 2026, bringing together the international community working with NMR and related techniques in food science.
Hosted at the Research Area of the National Research Council (CNR) in Milan, the event will provide a high-level forum for sharing advances in magnetic resonance methods applied to food systems.

The 2026 edition is organised under the theme “Unlocking Food’s Molecular Secrets, for Sustainability and Health”, highlighting how NMR techniques—from routine analysis to advanced hyphenated and non-invasive approaches—can illuminate the links between food composition, quality, sustainability and human health. The conference aims to show how these tools support more sustainable food production, better quality control, and a deeper understanding of the nutritional and health impact of foods. MRFOOD2026 will focus on the latest applications of magnetic resonance in areas such as authenticity and traceability, process and quality control, structure–function relationships, and the assessment of environmental and health impacts along the food chain.
