Holifood participatory process: exploitation of FSOLabs approach

Following the participatory process implemented in the FS4EU project, CNR ISPA and the EU FOOD SAFETY PLATFORM have applied the methodology in the H2020 HOLiFOOD project, which introduces a holistic approach to food risk management. Active since 2022 and developed in 10 European countries, coordinated by Wageningen University Research (the Netherlands), HOLiFOOD uses big data and artificial intelligence to develop predictive systems capable of promptly identifying emerging hazards along the food chain. The EU Food Safety Platform contributes with co-creation methodologies, engaging stakeholders through living labs and citizen science initiatives, ensuring inclusive decision-making.

Living Labs

HOLiFOOD sets up user-centered Living Labs which are dynamic platforms for experimentation and co-creation. These involve diverse stakeholders in collaborative activities such as workshops and surveys to foster innovation in food safety. The Living Labs operate in phases that include exploration, refinement, and testing of methods and AI-driven tools for emerging risk identification and holistic risk assessments. The process is iterative, with feedback cycles aimed at meeting the needs of end-users and improving risk prediction models.

Specifically, HOLiFOOD has three Living Labs:

  1. AI-driven Emerging Risk Identification – focusing on prediction tool development and stakeholder needs.
  2. Holistic Risk Assessment and Acceptance – involving co-creation workshops to generate decision analysis criteria.
  3. AI-driven Digital Platform Co-design – focusing on designing tools for food safety management.

Workshops include interactive sessions, Delphi surveys to gather expert opinions, and cross-fertilization sessions to share practices and lessons learned. The Living Labs foster participation without the need for traditional sterile labs, encouraging practical and inclusive innovation.
After 2 years of co-creation, APRE and CNR, supported by the EU FOOD SAFETY PLATFORM, organized a cross-fertilization workshop during the Consortium meeting held in Bari, on 9 October 2025.
